Peanut Butter Free Cookie Recipe Using Sunbutter

Thumbprint cookies free of peanuts and the most common food allergies. This is a peanut free and egg free recipe that is sure to please your taste buds. We used Enjoy Life Chocolate Chips an allergy safe chocolate chip and Sunbutter in replace of PB.

If your allergic to Peanuts there are quite a few alternatives available however verify that the alternative is still free of your allergens.There are alternatives that use golden peas and peas are a part of the legume family same as the peanut.

Other alternatives use soy or sunflower seeds. I used sunbutter in this recipe which uses sunflowers seeds. As always check the manufacturing process to confirm that the product you are using is not manufactured with your specific food allergies.

Thumbprint Cookies Ingredients:

  • 2 Cups Brown Rice Flour
  • 2 tsp Baking Powder 
  • 1/8 tsp Salt
  • 1/2 Cup Raw Sugar
  • 3/4 Cup Sunbutter (or peanut free PB of your choice)
  • 1 1/2 Tbsp Pure Vanilla
  • 4 oz Container Plain or Cinnamon Organic Applesauce (approx 1/2 cup)
  • Enjoy Life Mega Chunk Chocolate Chips (or chocolate of your choice) enough to place on each cookie
  • 1 - 3 Tbsp Water

Pre-heat oven to 350

In a medium sized microwaveable bowl;  add sunbutter (or PB alternative of your choice), vanilla, applesauce, sugar mix together until all ingredients are combined. Melt in microwave for approx 30 to 45 seconds until mixture becomes creamy and soft.

In a separate bowl add dry ingredients; flour, baking powder, salt and stir to throughly combine ingredients. 

Next slowly fold dry ingredients into wet sunbutter mixture. Mix with fork or hands until mixture forms into a cookie dough and flour is completely mixed in. If mixture is still dry mix in 1-3 tablespoons water.

Line a cookie sheet with parchment paper or lightly grease with oil or butter of your choice. Roll dough into tablespoon sized balls and place on cookie sheet (should make approx 25-30 cookies). 

Next take Enjoy Life Mega Chocolate Chips and place on chip into the center of each cookie. Place dough into the oven and bake for 10-12 minutes.
