I absolutely love finding new sweet potato recipes. The first time I ever ate Gnocchi was actually homemade by my Dad and then I had it again at a restaurant in CA, it was so delicious!

Bake the sweet potatoes at 350 for approx 30-40 mins until soft. Allow to cool, then peel off the skin (it should come off easily once cooked and cooled). |
Next mash the sweet potato in a bowl and add both of the flours and mix until all ingredients are blended together. The mixture should start to form into a dough like consistency. I find it easiest to mix with your hands.
Once the mixture forms into a large ball, roll the dough into smaller sized balls and tear off fist fulls of the dough and roll into a log shape, approx. 2 cm thick.
Using a knife cut off 1 cm inch pieces. Place gnocchi onto plate with enough room to leave space in-between, I rolled each piece into a ball, however you can also leave as is or for a more decorative pasta press each piece with a fork or pinch in-between two fingers to shape.
Bring water to a boil adding approximately 3 tsp. of salt. Once the water comes to a rolling boil carefully drop gnocchi into the pot (try using a ladle to ease into water) and stir the gnocchi to prevent sticking and leave to cook for approx 5-10 mins (gnocchi will reach the surface when done so stay close by).
Scoop out the gnocchi with a slotted spoon, gently shake off the water and transfer pasta to a plate to dry.
You can either drizzle with a little olive oil and your choice of sauce or place into a pan with olive oil and fry for approx 3-5 mins (until a lightly golden).
