I love quinoa and ever since I made this batch of cookies using acorn squash seeds I can't get enough. I always save the seeds after making delicious acorn squash soup or stuffed acorn squash!

Pre-heat oven to 375
Place acorn squash seeds on foil and lightly spritz with oil of your choice. Place seeds in the oven roasting for 10-12 minutes until lightly golden, remove from oven and allow cooling.
Note: I usually leave seeds out (with acorn squash guts removed) for a day or two, allowing time for the seeds to dry).
Place acorn squash seeds, milk, vanilla, sugar in a blender and pulse until seeds are well blended.
In a small bowl combine cooked quinoa and chia seeds. Pour acorn squash mixture on top of quinoa and stir to combine all ingredients.
Note: You can heat milk prior to blending for a warm treat or eat this dish cold.
Place ligonberry jam or blueberries on top and enjoy immediately or you can place in the fridge and save for later!!
