An Acorn Squash Seed Chia Pudding Recipe!

Quinoa Dessert Recipes? Try adding quinoa into your healthy dessert recipes. With the addition of acorn squash and chia seeds this makes a wonderful pudding recipe!

I love quinoa and ever since I made this batch of cookies using acorn squash seeds I can't get enough. I always save the seeds after making delicious acorn squash soup or stuffed acorn squash!

Did you know that quinoa is packed with anti-inflammatory phtonutrients, a small amount including omega-3 fatty acids, manganese, magnesium, fiber, folate and zinc? Check out whfoods.com to learn more.

Chia seeds also contain B vitamins, omega-3, protein, fiber, antioxidants and calcium.

Quinoa Dessert Recipe Ingredients:

  • 1/3 Cup Acorn Squash Seeds Roasted
  • 1 TBSP Vanilla
  • 1 to 2 TBSP Brown Sugar (or Agave)
  • 1 Cup Vanilla Hemp Milk (or milk of your choice)
  • 1 TBSP Chia Seeds
  • 1/4 Cup Cooked Quinoa (I used leftover Quinoa)
  • 1 to 2 TBSP Ligonberry Jam (or fresh blueberries)

Pre-heat oven to 375

Place acorn squash seeds on foil and lightly spritz with oil of your choice. Place seeds in the oven roasting for 10-12 minutes until lightly golden, remove from oven and allow cooling.

Note: I usually leave seeds out (with acorn squash guts removed) for a day or two, allowing time for the seeds to dry).

Place acorn squash seeds, milk, vanilla, sugar in a blender and pulse until seeds are well blended.

In a small bowl combine cooked quinoa and chia seeds. Pour acorn squash mixture on top of quinoa and stir to combine all ingredients.

Note: You can heat milk prior to blending for a warm treat or eat this dish cold.

Place ligonberry jam or blueberries on top and enjoy immediately or you can place in the fridge and save for later!!

I loved this dessert and devoured shortly after making it, yum!!
