Finding delicious pizza recipes has been one of the more challenging recipes to make.
I avoid wheat, gluten, dairy and many more making it hard to create a pizza crust and cheese that is not only allergy friendly but also taste good.
Since becoming allergy free, pizza has been one food that I really miss.
Gluten and Wheat free bread and Pizza crust are great but I haven’t found any that I really like or that are not manufactured in a facility that also manufactures tree nuts, soy or one of the other foods that I avoid.
Most crust and bread recipes call for xanthan gum or guar gum which I personally try to avoid.
Guar gum comes from ground seeds of the guar plant and xanthan gum is artificially created, fermenting sugars with xanthomonas campestris. I would read more about these two flours before using them as a thickening agent in your diet. Too much of either could cause nausea or a laxative side effect, most recipes call for a small amount (a TBL or less).
Pizza Crust Ingredients
Start by baking or boiling a potato until soft (350 for 40 mins to 1 hr, or boil without skin for 30-40 mins). Once the potato is cooked allow to cool for 5-10 mins. |

Pre-heat oven to 425
In a large bowl mix together Dry ingredients (check your yeast package instructions, for this recipe I added the yeast into the dry mixture).
Using a blender or hand mixer; mix together the baked potato (skin removed), olive oil, and hot rice milk.
Add blended potato mix into flour mixture and mix together with hands. If mixture is too sticky add additional rice flour, should form dough like consistency.
If using a pizza stone place the stone in preheated oven for 10-15 mins.
Recipe will make 2 small pizzas or 1 large. Form dough into one or two balls and place on pizza pan or stone.
Lightly dust your hands with flour and gently press the dough into flat disks about ½ inch thick to form a round pizza shape.
Place pizza crust without topping in the oven for 10 mins. Remove and top with your favorite toppings.
While the crust is in the oven combine all of the topping ingredients, except cheese sauce and marinara sauce, in a bowl and mix together. Take pizza crust out of oven, add marinara sauce, toppings, and cheese sauce.
Cook pizza with toppings for additional 15-20 mins and enjoy!
