Gingerbread Cookies! A delicious wheat and gluten free chocolate chip cookie recipe!

I didn't realize how much I love Gingerbread Cookies!

This may be known as a Christmas Cookie Recipe however this recipe is a perfect dessert or tasty treat year round!

I made this into a chocolate chip cookie recipe instead of using frosting for decoration.

I also tried a few with a cinnamon sugar decoration by simply mixing together sugar and cinnamon then sprinkle the mixture onto the cookie dough and bake! Two great cookies in one batch, making for a great variety for your family!

Gingerbread Christmas Cookie Recipe

  • 2 1/2 Cups King Arthur Flour (Gluten Free Multi-Purpose Flour: see image to the right)
  • 1 tsp Baking Powder
  • 1 1/2 tsp Cinnamon
  • 1 1/2 tsp Ground Ginger
  • 1/2 tsp All Spice
  • Pinch of Salt
  • 1/4 Cup Earth Balance Soy Free Butter (see image to the right)
  • 1/2 Cup Organic Cinnamon Apple Sauce
  • 1/4 Cup Molasses
  • 1 TBSP Pure Vanilla
  • 1 TBSP Apple Cider Vinegar
  • Approx 1/4 Cup Chocolate Chips (we use Enjoy Life which state dairy, nut, soy free)

Note: Please always remember to check the labels before purchasing any processed ingredients (flour, butter, etc.) to verify that it does not contain your allergen and does not risk cross contamination. Contact the manufacture if you are unsure or just avoid that product.

Pre-heat oven to 375

In a medium size mixing bowl combine all wet ingredients, place into microwave (30 seconds to 1 minute) or melt butter separately and mix all ingredients until well combined.

In a separate bowl mix together flour and remaining dry ingredients, mix until all dry ingredients are combined.

Gently fold flour mixture into the wet ingredients and stir until flour is completely mixed in, you should now have a cookie dough consistency. 

Lightly grease a cookie sheet or line with parchment paper. Use a gingerbread cut out to shape cookie dough and place onto the cookie sheet or roll the dough into table spoon size balls. 

Use chocolate chips to create your own designs on each gingerman, sprinkle with a mixture of cinnamon and sugar or make a mixture of both for some variety. 

Place cookies into oven and bake for 10-12 minutes (cookies will become crunchier as they cool).

Depending on how you shape the cookies this recipe makes approx. 16-20 cookies.
