Do you have a gluten allergy, wheat allergy, egg allergy or milk allergy?
Flaxseed is commonly used as an egg replacer however since some people have flaxseed allergies I have omitted that ingredient from this recipe.
Remember to read the food allergy labels carefully when purchasing your flour (as well as all products) since many companies also manufacture products with soy, wheat and nuts.
Ingredients for Easy Cookie Recipes
Preheat oven to 350.
In a medium sized bowl start by mixing together tapioca and rice flour, next add baking powder and salt, mix the baking powder in completely.
Create a well in the flour and add in oil, vanilla, maple syrup and water. Mix the liquids in the center of the bowl a little then mix liquids into the flour mixture.
Batter should have similar consistency to a cake batter compared to regular cookie dough. If necessary add additional water (1 tbls at a time) to reach consistency.
Note: If you prefer to make individual cookies instead of a bar cookie you will want to add less water (start by adding ¼ cup of water at a time instead of ½ cup).
Add ¼ cup of chocolate chips into the batter and mix.
Pour batter into greased loaf or 8x8 pan.
Note: I bought a spray oil dispenser so that I can use my own oil, cooking spray cans from the store may contain allergens like soy or sunflower oil
Place pan in the oven and bake for 10-15 minutes until lightly golden, depending on the size of your pan. Let cool for 2-5 mins and serve immediately.
