Pudding Coffee Dessert Recipes

Do you love coffee? Are you looking for delicious coffee dessert recipes?

I love a good cup of coffee and the wonderful aroma!

Coffee makes for a delicious afternoon treat, well, really a good treat for any time of the day!

I actually started out making this for a different recipe.

However when I discovered how tasty it was I had to make a few adjustments and turn this into a pudding.

I used caffeinated coffee however if you prefer it is okay to substitute for decaf.


For This Delicious Coffee Pudding Recipe You
Will Need the Following Ingredients:

  • 1 ½ cups of Coffee (Your favorite choice, I used an organic coffee)
  • 4 cups Vanilla Rice Milk (I like Pacific Brand as it does not contain sunflower)
  • 2 tbl Brown Sugar (organic if available)
  • ¼ Tapioca Flour
  • ¼ cup chocolate chips (I use Enjoy Life’s mini chocolate chip. They are dairy, nut and soy free)

Start by brewing your cup of coffee, I have a Keurig and used the large cup setting to make a single serving.

Pour coffee into a sauce pan and add 2 tbl brown sugar, 4 cups of Vanilla Rice Milk and tapioca flour.

Mix well with a whisk until all ingredients are blended and tapioca flour has dissolved. Heat the pudding mixture on medium high heat.

Stir occasionally, to prevent sticking, until the pudding thickens approx. 5 mins.

Allow the pudding to cool for 5-10 mins. I like to stir occasionally while cooling to prevent pudding skin however you can leave to sit if you prefer to have the skin.

Pour pudding into 4 serving dishes and sprinkle one tablespoon of chocolate chips into each pudding dish.

This pudding is great served warm or cold.
