I have been experimenting with new cauliflower recipes! I love cauliflower and one of my favorite ways to make it is by roasting it in the oven.
There is something about roasting it that just gives cauliflower a little extra flavor compared to steaming or boiling.
Additionally this wonderful vegetable comes in a few colors; white, orange, green, purple.
White cauliflower is the most common and was used in this recipe. Orange contains 25 times the level of vitamin A compared to white.
Green sometimes referred to as broccoflower and purple has the presence of an antioxidant group anthocyanin which is also in red cabbage and red wine.
Cauliflower can be a great alternative to use in replace of potatoes. Mashed cauliflower instead of potatoes and the same for this recipe cauliflower gnocchi instead of potato gnocchi.
This veggie is low in carbs, and high in fiber, contains vitamin C and K, manganese and omega 3.
Start by dicing the cauliflower and place on a lightly greased baking pan. Bake at 350 for approx. 15-20 mins.
Once roasted place the cauliflower in a blender and add ¼ cup water and blend, consistency should be like a baked potato. If needed add additional ¼ cup of water and blend again.
In a medium mixing bowl mix together Rice Flour, Tapioca Flour and a pinch of salt. Pour in blended cauliflower and mix, should form into a dough, it may be better to finish by mixing with your hands.
Next roll the dough into a ball and break off a fist full of the dough and roll into a log, approx. 2 cm thick.
Using a knife cut off 1 cm inch pieces. Place gnocchi onto plate with enough room to leave space in-between, I gently pinched each piece to shape it, you can also press with a fork.
Bring water to a boil and add 3 tsp. of salt. Once boiling drop gnocchi into pot and stir the gnocchi to prevent sticking, allow the gnocchi to cook for approx 3-5 mins (gnocchi will reach the surface when done).
Scoop out the gnocchi with a slotted spoon and shake off the water and transfer to a plate to dry.
Drizzle with a little olive oil to prevent sticking. Add your choice of sauce or place into a pan with olive oil and fry for approx 3-5 mins (until a little golden) for a crispier flavor.
