Allergy Friendly Banana Pudding!

Banana Pudding Recipe

Banana Pudding has become one of my new favorite dessert recipes!

I am always thinking of ways to create new healthy dessert recipes, as I absolutely love dessert!

So I thought what better way than to add a little fruit to my pudding recipes. Pudding is a delightful treat. Homemade pudding is quick and easy to make.

Adding bananas is a great way to sneak nutrients into your dessert and add a new favorite to your list of banana recipes.

Bananas have approx. 602 mg of potassium, 2 grams of protein, 4 grams of fiber, along with vitamins and minerals such as Riboflavin, Vitamin B6, Folic Acid, Vitamin C, Magnesium. A great source of nutrients.

So how do you make pudding while avoiding food allergies?

Healthy Dessert Recipe Ingredients:

  • 1 Ripe Banana
  • 4 Cups Rice Milk (I use Pacific Brand)
  • 1 Tbl Vanilla
  • 1 Tbl Maple Syrup
  • ¼ Tsp Cinnamon
  • 1/8 Tsp Nutmeg
  • 1/8 Tsp Ground Ginger
  • ¼ Cup Tapioca Flour

Preheat oven to 350

Take the whole banana with peel and wrap completely in foil.

Place the banana in the oven and bake for approximately 15-20 mins. The banana should be a little softer and warm.

Remove the banana from the foil and peel.

Place the banana in a blender along with 1 cup of rice milk, vanilla, maple syrup, cinnamon, nutmeg and ginger. Blend until smooth and creamy.

Pour the mixture into a pot along with the remaining 3 cups of rice milk. Whisk in a ¼ cup of tapioca flour; stir until the flour is dissolved. Turn onto medium heat and bring mixture to a boil, continue to stir constantly to prevent sticking.

Note: The consistency should thicken as the pudding boils and will thicken a little more while cooling.

Remove pot from heat and allow to cool for 5 minutes. Pour into desired serving dishes, serves approx. 4. This dish is great warm or chilled. I like to serve with a few mini chocolate chips sprinkled on top (I use Enjoy Life Brand).
