I use to love Shake and Bake for a quick and easy dinner, however, I can no longer use this product due to food allergies.
This Chex Crusted chicken marinade recipe is just as easy as Shake and Bake! However, it is a little healthier. Best of all you control the ingredients, which is important when you have food allergies!
Gluten Free Rice Chex were utilized in this recipe, giving the chicken a nice crispy breaded taste! Always remember to check the label to confirm the product is free of your allergens and cross contamination.

Marinade Instructions:
Start by placing the chicken on a cutting board or hard stable surface. Cover with parchment paper and flatten chicken using a meat mallet if you have one (I didn’t at the time and used a small frying pan).
Next place chicken in a zip lock bag. Add the juice from 1/2 a lemon, 1 cup chicken stock and the whole bay and mint leaf to the bag and.
Press the bag closed and place into the fridge, allow at least 2 hours for marinating.
Preheat oven to 400 and grease baking pan with olive oil
To make Chex mix:
With your hands crush Chex in a bag until there are no whole pieces left, add flour along with celery salt, Italian seasoning and ginger to the Chex and mix (or shake) together.
Pour a little bit of the Chex mixture onto a plate (enough to coat one piece of chicken). Add more of the mix as needed to coat each piece of chicken. Note: You can take the chicken from the marinade mixture and set onto Chex/flour mixture to coat, this will help stick. Place the chicken pieces into the greased pan and bake for approx. 20-30 mins until chicken is lightly browned and completely cooked. If needed check with a meat thermometer. |
