Avocado cookie recipes? Yes that is what I said and no these cookies are not green! If someone gave these to you to eat you would have no idea that there was an avocado in this tasty recipe.
Which is exactly what I was hoping to accomplish with this recipe, so I made it when no one was around and left these allergy safe cookies out to be eaten and enjoyed!
Another great benefit of this delicious green fruit is that it is packed with fiber, potassium, carotenoids, protein and healthy fats! Making this a great healthy substitute for butter and dairy!
Pre-heat oven to 350
In a medium sized bowl mash avocado with a fork or masher until all lumps are gone and avocado is creamy.
Next add in applesauce, sunbutter, vanilla, sugar and mix until ingredients are combined. Melt mixture in microwave for approx 30 seconds and stir.
In a separate small bowl mix together flour, baking powder and salt. Stir to throughly mix in the baking powder. Slowly fold dry flour mixture into wet ingredient mixture and stir until it starts to form into a ball of cookie dough and all flour is dissolved.
Mix in chocolate chips and stir. Line a baking sheet with parchment paper or lightly grease with oil or butter of your choice.
Roll dough into tablespoon size balls and place on sheet, should make approximately 20 cookies. I kept these round however you could also lightly flatten with a fork.
Place in oven and bake for 10-12 minutes, I like to take them out closer to 10 minutes for a softer cookie.
After baking allow to cool and enjoy this delicious dessert recipe treat!
The dough for this recipe was quite delicious however also a wonderful texture once baked. A little crispy on the outside and nice and soft in the middle!
