Vegan Meals with Mango Recipes

This has to be one of my favorite vegan meals that I have made so far, especially with the addition of delicious mango recipes, see below for the sauce. Let’s start cooking!

Vegan Meals with Mango Recipes

Vegetarian Recipe Ingredients:

  • 15 oz. Can Garbanzo Beans
  • 2 Tbl Pumpkin Seeds
  • 4 oz. Can Diced Green Chilies (or diced fresh chilies)
  • 2 Tsp. Rice Vinegar
  • 1/8 Tsp Molasses and Salt
  • 1 Tsp Maple Syrup
  • ¼ Tsp Oregano,
  • ¼ Tsp Ground Ginger
  • ¼ Tsp Minced Onion
  • 1/8 Tsp Celery Salt and Coriander
  • Medium Yam (approx. 1 cup mashed)
  • Pinch of Cayenne Pepper

Start by either boiling or baking the yam (approx. 30-40 mins). To boil remove the skin then place in boiling water, or wrap in foil and bake at 350.

Place the pumpkin seeds in a small blender and blend until it turns into a powder.

Next rinse the garbanzo beans and place in a blender and blend until all of the chunks are gone (may need to add up to a ¼ of water to blend). 

Combine the pumpkin seed powder, garbanzos and remaining ingredients in a bowl, mix well to combine everything.

Allow the yam to cool and mash into bean mixture.

Note: I didn’t use any flour in this mixture however if you want it to be a little thicker you can add flour of your choice (I normally use Rice Flour), up to ½ cup until it reaches desired textured. However this recipe also works well without flour.

Heat a large skillet with enough oil to coat the bottom of the pan, warm oil then place ¼ cup amounts of the bean mixture into the oil (you can form to desired shape). Cook for 5-10 minutes on each side, just enough to crisp.

Continue frying until the batter is all used.

Note: This recipe also taste good without cooking, can use as a dip or eat like mashed potatoes.

I served this dish with lightly sautéed diced cauliflower, carrots, zucchini using olive oil, fresh kale and the below mango sauce.

Easy Mango Recipes: Sauce Ingredients

  • 1 Ripe Mango
  • 1/8 Tsp Ground Ginger and Coriander
  • Pinch of Cayenne Pepper
  • 1 to 2 Tbl of water to help blend

Combine all ingredients in a mini blender and blend until smooth.
