Nut Free Trail Mix with Sunbutter!

One of the most challenging food obstacles that we have faced with food allergies is trying to find good healthy snacking recipes! Usually are go to has been leftovers from the previous nights dinner but it's nice to have quick and tasty options that you can take with you on the go.

Quinoa Cereal

Another favorite of mine is smoothie recipes as it's an easy way to load up on nutrients, fruit, veggies and protein.

I have to say this nut freemix is a new favorite! You can also treat it as a dessert recipe.

I recently discovered Quinoa Cereal, not the flakes (looks like little puffs - almost like a rice puff).

I found this cereal in the bulk section of my local natural health food store, it adds a nice crunch to this recipe!

Protein Trail Mix Ingredients:

  • 1 Cup Quinoa Cereal
  • 1 Cup Brown Rice Cereal
  • 1/2 Cup Organic Vanilla Rice Protein
  • 1/2 tsp Cinnamon
  • Pinch Himalayan Salt
  • 1/2 Cup Sunflower Seeds
  • 1/2 Cup Pumpkin Seeds
  • 1/3 Cup Enjoy Life Chocolate Chips (or allergy safe chocolate of your choice)
  • 1/2 Cup Cranberries
  • 1/2 Cup Sunbutter (or nut free butter of your choice)
  • 1/3 cup Brown Rice Syrup

In a medium size bowl combine all dry ingredients and mix together until well combined.

In a small bowl mix together sunbutter and brown rice syrup. Place bowl in microwave for 30 seconds to 2 minutes until mixture is smooth and creamy.

Pour sunbutter mixture into dry ingredients and stir. I found is best to mix by hand.

Trail Mix, Nut Free with Pumpkin Seeds and Sunbutter!

Place mixture into baking dish, or roll into balls and place in the re-refrigerator for an hour to allow mixture to set.

Remove and enjoy this tasty treat!! I have to say this only lasted for about a day, it was so delicious!!

I choose to place my mixture into a baking dish, I was able to break into chunks then placed the crumbs into a bag for a quick snack.
