Making chicken doesn't have to be difficult, there are easy ways to create delicious a baked chicken recipes.
I love being able to toss dinner into the oven and walk away until the timer goes off, so I can get some other things done around the house or make some dessert recipes.

How to Marinate the Chicken:
Place chicken on cutting board and cover with parchment paper.
Flatten the chicken using a meat mallet if you have one or if you don't have one, I used a small frying pan which worked well.
Next place chicken in a large zip lock bag.
Add the juice from 1/2 lemon (squeeze into bag, then place peel in bag), 1 cup chicken stock, 1 whole bay and mint leaf to the bag.
Place the bag in the fridge and allow marinating for at least 2 hours for best results or overnight.
Preheat oven to 400
Grease the baking pan with olive oil and drizzle with lemon juice (approx 1 tsp).
With your hands crush Chex in a plastic bag. Crush the Chex until there are no whole pieces left.
In a small bowl or pan mix together Chex, flour, celery salt, Italian seasoning and ginger, stir to combine ingredients.
Pour a little bit of the Chex mixture onto a plate (enough to coat one piece of chicken).
Add more of the mix as needed to coat each chicken (you can take the chicken from the marinade mixture and set onto Chex/flour mixture to coat).
Coat both sides of the chicken then place a few thin strips of carrot and 1 to 2 pieces of brocollini in the chicken.
Roll closed, if needed place a wet toothpick in the chicken to hold in place.
Place the chicken into the lightly greased pan bake for 25-35 mins until chicken is lightly browned and fully cooked.
Serve alongside your favorite veggies and potatoes and drizzle with white sauce.
