Pumpkin Seeds

Fall is a great time of the year to start making delicious pumpkin seeds! Although I generally will buy these delicious seeds year round at my local grocery stores! It's nice to have these on hand as they also can be a great peanut butter or nut alternative if you can have seeds in your diet. Plus I like to have them on hand when a craving strikes.

We also have some recipes in our Dessert Recipe Cook Book using this wonderful seed, we made our own version of a PB chocolate cup however peanut butter free!

I love squash recipes! There are so many things to do with this orange squash including the seeds. Anything from roasted seeds, muffins and the below smoothie recipes!

These seeds are a great source of zinc, which is a mineral that may help to prevent osteoporosis. This seed also contains manganese and magnesium, potassium, vitamins E and B. This seed also contains protein and fiber.

Chia Seeds Pumpkin Smoothie Recipe

  • ¼ cups roasted seeds
  • 1 banana
  • 1 tbl Chia seeds
  • Pinch; All spice, cinnamon, ground ginger
  • 1 Cup Vanilla Hemp Seed Milk (or your choice of milk, hemp seed milk is a little creamy)
  • 1 Cup of Water

Place all of the above ingredients (place items in blender as noted in order above) into a blender.

Blend until all ingredients are well blended, pulsing occasionally, for approximately 2 to 3 minutes.

Pour the smoothie mix into a glass and enjoy immediately!

Chocolate and Kale Pumpkin Seed Recipe

  • 2 Tbl Roasted Seeds
  • 1 Banana
  • 1 Scoop Vega Energizing Chocolate (optional – but delicious)
  • 1 Tbl Chia Seeds
  • Pinch; All spice, cinnamon, ground ginger
  • 1 Cup Vanilla Hemp Seed Milk (or your choice of milk, hemp seed milk is a little creamy)
  • 1 to 2 cups of water depending on your desired consistency
  • 1 handful Kale or Spinach

Place all items into a blender; I added the items into the blender per the order of the ingredients above.

I don’t have a high power blender; I used my Oster blender which worked great for this recipe!

Blend for 2 to 3 minutes until all items are well blended, especially the seeds.

Pour into your favorite glass and enjoy.
