Gluten Free Corn Dog Recipe

Why do I love this delicious breaded mango chicken recipe? This is a great one pan easy meal that is allergy friendly.

Due to multiple food allergies, including a gluten and wheat allergy I can no longer have corn dogs or just about any other frozen foods in the house.

It is nice to have a few quick and easy recipes on hand that I can turn to when I really don’t feel like preparing a large meal.

I have been buying Chicken Sausages by Aidell’s, Mango flavored, this company also offers other sausages such as chicken and apple.

However there a few that I do not consume as they contain garlic.

This is a great quick and easy dinner, which is sometimes rare when you make everything from scratch. And one pan means fewer items to clean!

Additionally it is a great way to hide some spinach in your food, just in case you have a picky eater in your family.

I note adding spinach but you can add any of your favorite vegetables to this dish or use Kale.


Ingredients:

  • 1 package (contains 4) Aidell's Mango Sausage (or sausage of your choice - this brand carries additional flavors)
  • 1/3 cup frozen chopped spinach (can also use fresh)
  • 1 tsp Olive Oil

Bread Mixture:

  • 2/3 cup brown rice flour
  • 1 tsp Milled Flaxseed (can be omitted if you have an allergy to flaxseed)
  • 1/4 tsp Paprika, Ground Mustard, Celery Salt, Ginger
  • Pinch of Nutmeg
  • 3/4 cup water

Start by chopping the sausage (if desired you can leave whole) and place into a skillet with approx. 1 tsp of olive oil.

Heat on medium high and allow the sausage to crisp. Once slightly crispy add spinach and cook on low (stirring occasionally).

For Breaded Mixture:

Mix together flour, milled flaxseed (optional), and seasonings, mix well then add water. Batter will be a little liquidy.

Pour the batter over sausages and stir a few times.

Continue to cook on medium heat until bread mixture is fully cooked (approx 5-10 mins); the bread doesn't take long to cook, occasionally flip around the sausages to evenly coat and prevent sticking.

Serve and enjoy!
