This recipe uses avocado and applesauce in replace of butter, oil and eggs helping to make this recipe super moist and delicious!
Leaving out the egg and dairy also makes this an allergy safe dessert recipe that the whole family will enjoy!
Best of all if you keep every one out of the kitchen while your making this tasty treat, they will never suspect that there is a healthy nutritious avocado in this recipe!

Pre-heat oven to 350
In a bowl mix together avocado and applesauce, mash until avocado is smooth and creamy. Next combine sugar, vanilla, and mint. Stir until all ingredients are combined and smooth.
In a separate bowl mix the dry ingredients starting with the rice flour and baking powder, thoroughly combine then mix in remaining dry ingredients.
Slowly mix the dry ingredients into the wet avocado mixture and fold together until flour is dissolved, mixture should turn into a batter.
Last but not least mix in the chocolate chips!!! Luckily this batter is egg free so of course I had to sample the batter and it was delicious!!! I decide not to eat it all so I could bake some : )
Grease a 8x11 pan with oil of your choice then pour batter into pan, I used a glass pan.
Place into the oven and allow the avocado mint brownie to bake for 20-25 mins. Should be firm to the touch.
Allow to cool for 5-10 minutes so that the dessert can set, then dig in and enjoy this delicious dessert recipe!
