I love acorn squash recipes! You can make so many delicious recipes from stuffed squash, roasting the seeds, using the seeds for cookies or even a delicious soup! You’ll notice this squash by its green skin speckled with orange patches and pale delicious orange flesh.
What makes this winter squash so great? Its flavor and warming color are enough to delight your senses but it is also packed with wonderful nutrients!
Carotenoids are one of its key antioxidants along with vitamin A, C, fiber and a lot more. It also contains anti-inflammatory compounds and omega-3.
So what will you make with your winter squash?
Glaze Recipe Ingredients
Start by cooking the squash using one of the following methods.
Cut the squash in half, I like to start by cutting off the bottom (opposite the stem) then cut length wise on both sides toward stem. Grab onto each side to pull apart on the stem side. Then remove the stem by carefully cutting around it.
Place squash open side up in a microwave safe dish that has a lid, fill a little less than half way with water.
With the lid on the dish place in the microwave and cook for 10-14 minutes until soft (cooking time will vary depending on size of your squash.
One squash is soft place on baking sheet open side up and place in the oven at 425 for 10-12 minutes until lightly golden.
Pre-heat to 400
Place squash open side up in baking dish and fill slightly less than half way with water.
Cover with foil with slits in it or with a lid and bake for 30-40 minutes until soft.
Remove lid and heat oven to 425and bake for additional 10-12 minutes until lightly golden.
Remove squash from oven and allow cooling.
Combine dry ingredients into a bowl and stir until all ingredients are well combined.
In a blender combine squash (without skin) lightly melted butter and remaining wet ingredients. Blend until smooth.
Pour squash into flour and gently fold and stir until all ingredients are mixed.
Add chocolate chips if desired or leave out and make below glaze recipe (see ingredients above)
Pre-heat oven to 350
Roll the dough into small balls (close to the size of a tablespoon) and place dough onto a parchment paper lined cookie sheet.
Press the ball of cookie dough dough down with a fork, and place into the oven. Bake cookies for 15-20 minutes (remove closer to 15 minutes for a softer cookie). While cookies are baking make the glaze recipe below!
Allow cookies to cool for 5-10 minutes and pour glaze over if desired
To make the glaze start by combining the powder sugar, hemp seed milk and salt into a bowl. Next mix ingredients until powder is dissolved then drizzle over cookies!!
